               Kadai Chicken


Ingredients:

1/2kg chicken marinated for about 1 hour with ingredients below:

Chilli powder - 2tbsp
Garam masala - 1tbsp
Black pepper powder - 1tbsp
Coriander powder - 1tbsp
Cumin powder - 1tsp
Turmeric powder - 1/2tsp
Ginger garlic paste - 1tbsp
Squeeze in half lemon
Salt

Other ingredients:
Onion - 1 big
Spices - Cinnamon, cardamom,star anise, cloves and bay leaf
Tomato - 1
Ginger garlic paste - 1tsp
Green capsicum - 1 (I used half)

Method:

1. Heat the pan and add oil. Add in spices, onions and ginger garlic paste.

2. Saute well until onions turn translucent.

3. Add in tomatoes. Keep stirring until tomatoes are soft.

4. After that, add in chicken pieces and mix well. Cook for about 10 minutes.

5. Add on water a bit and salt. Cook for another 5 minutes.

6. Throw in capsicum and mix well. 

7. Wait for another 5 minutes and turn off the stove. Kadai chicken is now ready.

Pumpkin & Brinjal Gravy



1 large onion
1 green chilli
4-5 cloves garlic
2 inches ginger
1tsp coriander powder
1tsp cumin powder
1tsp curry powder
11/2tbsp tomato puree
1 medium sized brinjal (cut into small pieces)
2cups of pumpkin ( cut into squares)
1 red bell pepper (chopped)
Salt

1. Grind onion, green chilli, garlic and ginger with little bit of water into a paste.

2. Heat oil in  a pan. Put in the brinjal and pumpkin and fry for a minute.

3. Add in the paste. Mix well and let it cook for about 10 minutes. Stir in between.

4. Next, add in tomato puree, coriander, cumin, curry powder and salt. Add in some water.

5. Cook the mixture in low fire for about 30 minutes.

Spicy Prawns with Potatoes




1 tsp black mustard seeds
2 Large red onions finely chopped
20 fresh curry leaves
5 cloves garlic and 1 inch ginger pounded into a paste with a little water
2 green chillies cut in half lengthwise
1 tsp turmeric
15-20 medium sized prawns peeled and deveined
1 tbs salt
1 tsp sugar
1 tbs lemon juice
1 tbs fennel seeds
1 tbs black peppercorns
2 potatoes
3 dried chillies ( or less if prefer less spicy )
Coriander leaves - to garnish

1. In a dry pan, dry fry the fennel seeds, black peppercorns and and  dried chillies. When the spices begin to smoke, take them off the heat and grind into a fine powder with a spice grinder or pestle and mortar.

2. Heat the oil in a large frying pan. Add the black mustard seeds and wait until they begin to pop. Add the chopped red onions and curry leaves and stir continuously until the onions become transparent and lightly browned.

3. Add the garlic/ginger paste and the green chillies and stir for another minute.

4. Then add in the turmeric and spice powder followed by the potatoes and cook until the potatoes are almost cooked. 

5. Put in prawns and stir until its well coated with the spices.

6. Add in sugar, salt and lemon juice.

7. Garnish with coriander leaves.

Shredded Fish Fry


Ingredients:

Fish ( i used mackerel) - 500gms
Onion - 1 (finely chopped)
Curry leaves
Mustard seeds - 1/4tsp
Fenugreek seeds - 1/4tsp
Turmeric powder - 1tsp
Chilli powder - 1tsp
Salt
Oil


1. Boil the fish with some salt in a non stick pan for 3-5 minutes. Don't overboil.
2. Remove skin and bones. Shred the fish into small pieces with your hands.
3. In a pan, add oil. Once heated add mustard, fennel seeds and curry leaves.
4. Add onion and salt. Fry till onion turns golden brown.
5. Add in turmeric and chilli powder. Saute well.
6. Once mixture is cooked and blended well, add shredded fish pieces and stir well.
7. Once fish pieces are coated well with spices, turn off the flame.

Mushroom Masala})

My first ever post since I created this blog.



Ingredients:

Oyster mushroom - 500gm
Cinnamon - 1 stick
Cloves - 2-3
Onion - 1
Green chilli - 1
Turmeric powder - 1tsp
Pepper powder - 1tsp
Cumin powder - 1/2 tsp
Tomato - 1 (small)
salt


1. Heat oil in a pan. Add cinnamon stick and cloves.
2. Put in onion and green chilli and saute it until onion turned slightly brown.
3. Add in mushroom, turmeric and cumin powder. Mix well until everything is well combined.
4. Add in chopped tomato and cook till its done
5. Season with salt and pepper.
